I love chicken salad. As the temperature is rising, in Texas, I am wanting cooler food options. I have shared a few salad recipes in the past. I will give you a few of those links and highlight the chicken salad that I make on a regular basis for a get- together or brunch.

Chicken Salad with Bacon and Almonds

  • 4 cups cooked, cubed chicken
  • 2 cups chopped celery
  • 1/2 cup slivered almonds, toasted
  • 4 to 5 slices of bacon crisply cooked and crumbled ( You will notice the picture of bacon, to the right. I think this ingredient is essential. It adds an extra depth of flavor. And, we all know, anything is better with BACON!)
  • 1 cup seedless purple or green grapes, sliced in halves
  • 1 cup mayo ( I use light mayo)
  • 1 cup sour cream ( I use light sour cream)
  • 1 tsp salt
  • 2 TBLSP lemon juice
  1. Combine chicken, celery, almonds, grapes and bacon.
  2. In another container, combine mayo, sour cream, salt, and lemon juice.
  3. Toss chicken mixture with the dressing and chill thoroughly before serving.

This recipe is so wonderful. Once you chicken salad, in this manner, you won’t ever go back to the old boring recipe!

Hmm that is interesting. My husband doesn't like fruit mixed with meat, but I wonder if he would like this? It looks delicious!

I love the idea of adding bacon. I'm going to try it next time I make chicken salad; it sure sounds yummy!

I'm not a huge fan of the chicken salad with grapes and such but this … well the bacon will def. make the difference! Sounds great!!!

I don't think my hubby would eat this but it sounds great to me! He would go for the bacon but not the fruit. Guess I'll get to eat it all by myself!!Thanks for sharing.

oooo I love chicken salad. But I NEVER would have dreamed of adding bacon. GOOD call. I'm definitely going this route — although I will have to modify slightly, as don't actually like mayo or sour cream, so I just have barely enough to give it a slight coat!

I forgot to add one more thing…

Just a suggestion: I never use "light" anything, because it just means it's full of fake ingredients, when the real thing is so much more nutritious! Real Food the way we ate it 100 years ago is so good for us, no matter what "they" tell us. I always think about what people ate on their farms for centuries before we all began getting so sick with diabetes and heart disease. 🙂
