Do you have a dozen, or more, boiled eggs sitting in your fridge today? I do too! But what’s a girl to do with so many eggs? Good question. I decided to search for some great recipes, allowing our eggs to live another day, giving us more joy and tasty goodness.

Finally, here is my recipe for Egg Salad – quick. easy.
simple.
Egg Salad- Quick. Easy. Simple
- 7 boiled eggs, finely shredded using fine shred edge of cheese grater
- 3 Tbsp mayo
- 1 tsp mustard
- Lawry’s Seasoning salt to taste
- pepper to taste
- minced onion to taste (optional)
- 1 tsp pickle relish – either sweet or dill (your preference)

Last week I included the recipe for Gooey Butter Cookies. Several of you let me know, through the week, that you had tried the recipe. I am so glad you liked it. A good tip from Deanna, “DOUBLE THE RECIPE. The recipe makes two dozen and, if you are entertaining, you may really want more because… THEY ARE THAT GOOD!” (paraphrased)
