Tempt My Tummy Tuesday… What’s an egg to do?

Do you have a dozen, or more, boiled eggs sitting in your fridge today?  I do too!  But what’s a girl to do with so many eggs?  Good question.  I decided to search for some great recipes, allowing our eggs to live another day, giving us more joy and tasty goodness.

Finally, here is my recipe for Egg Salad – quick. easy.
simple.

Egg Salad- Quick. Easy. Simple

  • 7 boiled eggs, finely shredded using fine shred edge of cheese grater
  • 3 Tbsp mayo
  • 1 tsp mustard
  • Lawry’s Seasoning salt to taste
  • pepper to taste
  • minced onion to taste (optional)
  • 1 tsp pickle relish – either sweet or dill (your preference)

Last week I included the recipe for Gooey Butter Cookies. Several of you let me know, through the week, that you had tried the recipe.  I am so glad you liked it.  A good tip from Deanna, “DOUBLE THE RECIPE.  The recipe makes two dozen and, if you are entertaining, you may really want more because… THEY ARE THAT GOOD!” (paraphrased)

And, on that note, I am asking you to lift our TMTT friend, Deanna at Deanna’s Corner Cooking, up in your prayers.  She has been having some healthy issues since February.  Deanna is currently having test run and receiving treatment in the hospital.  I know she would appreciate your prayers.
