Tempt My Tummy Tuesday…A Guacamole Crisis

No offense to my new neighbors here in the St. Louis region, but your idea of  “good” Mexican food maybe slightly different than mine.  We are a little closer to the border, in Texas, providing more opportunity for “authentic” Mexican flavors.  It is just a taste preference.  My hubby and I love our Mexican food and we have been having a difficult time finding a Mexican restaurant we truly like.  So, I decided to pull out my favorite Mexican recipes and make my hubby an great feast.

I started with Sweet Pea’s Enchiladas de Pollo y Queso (aka. Cheesy Chicken Enchiladas) from the Newlyweds Blog.   If you have never made these enchiladas, you are in for a treat!  It is not complicated and the flavor is BIG!  Next is my Salsa.  This recipe comes from one of my dearest friends, Debe! I have posted this recipe, in the past, but it is so good, you need to see it again if you haven’t tried it.  So far so good.  My meal is almost complete….. Now we only need some fresh avocados for the homemade guacamole. 

We have a problem….  I went to grocery store to buy all the ingredients for my Mexican feast.  The only problem was the avocados.  Not only were the avocados $4.95 EACH, (OUCH!) none were ripe for me to use that night or even the next night.  So, even if I had planned ahead, bought them and given them time to ripen, they WERE TOO EXPENSIVE.  I could not justify spending that much money on fresh avocados.  I don’t care how much my hubby and Grace love the GUAC! (Normally I would purchase 3-4 avocados when making homemade guacamole. We love to eat it. So it does not go to waste.)

My solution:  I bought a prepackaged guacamole found in the produce section of a local Super Walmart.  I had never bought Calavo brand before.  However, for the price of one avocado, this box contained 2 – 7oz packages of guacamole.  I used BOTH packages of the guacamole.   To give the store-bought guacamole a flavor of homemade, I added two heaping tablespoons of my homemade Salsa.  I have to say, it was very tasty.  My husband and Grace had no complaints, and they are my guacamole experts!

So, the next time you  have a craving for guacamole, and find yourself in the same bind as me, remember to try this idea.  I know there are several brands of pre-made guacamole. I am not a fan of all.  But, Calavo was good.  Also, you can try Wholly Guacamole.  That is another good brand.

I know some of you are asking, “Why not just skip the guacamole?”  Well, I say, that is just wrong!  You can’t skip the guacamole.  At least not in my household. 

The final meal was wonderful.  The enchiladas were so tasty, and the salsa and guacamole were full of flavor as well.  We were loving our Mexican feast, AND we didn’t even have to leave home.
