Tempt My Tummy Tuesday…Texas Golden Chicken

My hubby will eat chicken. But, he is SO a “Meat and Potatoes” kind of guy.  So, I am always trying to “kick it up a notch” when it comes to chicken, hoping he will suddenly be overjoyed at the prospect of eating chicken for dinner.  Having said that, I found this recipe while trying to come up with a new variation on the chicken theme.  It sounded good to me and I am hoping it will be as appealing to my honey.   I will be making it, one night this week.

Texas Golden Chicken

  • 8 chicken legs, skinned (I am sure you can use other parts, as well.)
  • 2 Tbsp. orange juice concentrate
  • 6 Tbsp. seasoned bread crumbs
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 1/2 tsp. paprika
  • 1/8 tsp. cayenne pepper


  1. Puncture drumbsticks with a fork and brush with orange juice concentrate.
  2. Spray a non-stick jelly-roll pan with cooking spray.
  3. Combine bread crumbs, salt, black pepper, paprika, and cayenne pepper in a plastic bag; add chicken and shake well to coat lightly.  Arrange chicken in a single layer in pan.
  4. Bake, without turning, at 450 degrees for 30 minutes or until cripsy and golden brown.  Blot with paper towel for extra crispness.  Best served at once.

Serves 4. 

I will serve green beans and mashed potatoes with this meal.
