Tempt My Tummy Tuesday… Easy Mexican Casserole

I have posted a similar version of this recipe in the past.   It is so simple. I made it for my parents, last week, while staying at their house.  We had been busy all day with Lana and the new baby.  Suddenly it was going to be dinner time with no plans.  I was so glad mom had all the ingredients, making it super easy to whip  up, alloying us to enjoy a great dinner.  (I forgot to take a quick picture of the dish.  Sorry.) 

Easy Mexican Casserole

Ingredients:
  • ·         1 pound lean ground beef
  • ·         1 medium onion, diced
  • ·         Chili powder to taste
  • ·         Ground Cumin to taste

  • ·         Garlic powder to taste
  • ·         Salt and Pepper to taste
  • ·         1 can cream of mushroom soup ( I used reduced fat version)
  • ·         1 can Rotel Mexican style diced tomatoes ( Use the mild version for less heat.)
  • ·         6-10 corn tortillas
  • ·         2 cups shredded cheddar cheese (or Colby/ Jack cheese)
Directions:
1.       Preheat oven 350.

    2.       Brown hamburger meat, sauteing onions in same skillet with hamburger meat.  Season with chili powder, cumin, ground garlic powder, salt, and pepper to taste.  Add can of pinto beans to the skillet with beef and onions.  Simmer for 5 – 10 minutes.
    3.       Prepare a 9 x 13 casserole dish with a non-stick spray.
     re      Tear corn tortillas into fourths.  Layer the bottom of baking dish with torn tortillas.  Save remainder of    tortillas for later.
    .        Pour beef/ bean mixture over the layer of tortillas.
    6.      Cover beef/ beans with 1 cup of cheese.
    7.       Use remainder of torn tortillas to cover the casserole.
    8.       In separate bowl, combine cream of mushroom soup and Rotel.  Stir until mixed well.
    9.       Pour soup mixture over the final layer of corn tortillas.
    10      Cover with remaining cheese.
    11      Cover with foil.  Cook 35 minutes.  Then remove foil and cook for 10 more minutes.
    E         Enjoy!  (I was having some formatting issues tonight. So, sorry for the directions.  I know the formatting is a little wonky.  Is wonky a word?)  🙂


      My daughter and I arrived home on Saturday morning, after our 22 hour train ride.  We loved our train adventure and would consider making that trip, via train, again.  Grace loved it.  We are glad to be home.  Grace’s 3rd birthday is today.  We celebrated, yesterday, taking her to the zoo and Cheesecake Factory for dinner and desert.  She had a big day.  So, today has been a subdued birthday.  All the travel and celebrating hit her hard.  She lounged around, watching a a movie, playing, and took a 3 1/2 hour nap. Sounds like an ideals birthday to me! 

      We are so blessed to have our Gracie.  We thank God for the gift of her.
