I am SO EXCITED about this post! First of all, I get to talk about one of my all time FAVORITE party snacks – QUESO! Secondly, one of my readers will be a BIG WINNER! I call that a WIN-WIN situation.
I am still amazed when I hear from blog readers who have never made or had Queso – melted cheesy Velveeta and a can of RO*TEL, all mixed together, ready to be dipped and eaten on a sturdy tortilla chip. YUMMO! Coming from Texas, RO*TEL dip or QUESO is just a standard dish at any good party. And, if you are talking about watching a sporting event, where food will be involved – it is MANDATORY!
When I was approached by RO*TEL, asking me to promote the “FEED THEIR GAME FACE SWEEPSTAKES“, I gladly said yes. I was also told I would be able to host a wonderful giveaway for my blog readers. So, here is the details for the Feed Their Game Face Sweepstakes: The grand prize includes free groceries for a year and 2 tickets, flight and lodging to any college football game during the 2011 season. Contestants can come back and enter once a day to maximize their chances of winning. Entry simply requires filling out a contact form. HERE is a link to the registration form. Now, for those of you who have never made this wonderful snack, here is the easiest and best party recipe you will ever need!
QUESO DIP
- one box Kraft Velveeta (You can use the 2% Velveeta if watching your waistline. It works great, too!)
- one can RO*TEL
Combine in a crock pot, turn on high and let the melting magic begin. You will want to stir periodically. Once the dip has melted, you can turn the crock pot to low or keep warm, so the dip remains warm throughout your party. If you are in a hurry, you can cook this in a microwave safe dish, stopping and stirring frequently, until the cheese is melted. Or you can cook on a stove top.

Last one… my favorite Rotel recipe (besides Rotel Velvetta dip – yum!!) is probably Mexican rice I make using a can of Rotel. The rotel adds great color and a zing of flavor!

Now for my favorite recipe: It’s the same as yours, Lisa, but we add 1 pound of browned ground beef, and one can of Hormel or Wolf brand turkey (no beans) chili. And sometimes, we use 2 cans of Ro*Tel tomatoes….

My favorite Ro*Tel recipe is Mexican Spaghetti.
1 box angel hair pasta (or whatever your fave pasta is)
1 can 98% reduced fat cream of mushroom soup
1 can 98% reduced fat cream of chicken soup
1 can of Ro*TEL drained
1 pound of chicken cooked and cubed
Low Fat shredded cheese (as much or as little as you like…I like a lot!)
Prepare pasta as directed and pour into a baking dish. Mix soups, Ro*TEL, chicken, and some cheese if you’d like. Pour over pasta in baking dish…you can mix it up if you like!
Bake at 350 for 20 minutes…or until hot. If you’d like, you can also sprinkle shredded cheese over the top and cook til bubbly and gooey!
Voila! An easy, healthy recipe with just the right amount of kick!

I love Ro*Tel ! I boil a 1 pound package of spaghetti , cook and drain. I saute about 6 cloves of garlic in pure olive oil until lightly golden. I pour the oil and garlic over the pasta, add a can of Ro*Tel and dinner is served…:)

My favorite RO*TEL recipe is soooo simple (and soooo delicious!) Simply combine 1/2 C RO*TEL Tomatoes/Green Chili with 1C low fat cottage cheese to make a quick, easy dip. Mmmm, it’s yummy 🙂

Here is our favorite recipe for something spicy using Rotel
Spicy Chicken Curry
Ingredients:
2 Tablespoons Coconut Oil
3 Medium Onions Chunked
2 Pounds Boneless Skinless Chicken Breasts Cut Into Small Pieces
4 Cloves Minced Garlic
4 Teaspoons Cumin
2 Teaspoons Paprika
1 Teaspoon Chili Powder
2 Cups Rotel Diced Tomatoes with Green Chili’s (Drained)
2 Cups 99% Fat Free Evaporated Milk
1 Teaspoon Salt
2 Tablespoons Dried Cilantro
4 Tablespoons Lemon Juice
1 Can Panang Curry Paste
Directions:
1) Heat oil in large pan
2) Add onions and chicken to oil and cook for 8 -10 minutes until chicken is no longer pink
3) Add Garlic, Cumin, Paprika and Chili Powder
4) Cook for 1 minute stirring
5) Add Evaporated Milk, Rotel diced tomatoes w/ green chili’s and Salt
6) Bring mixture to a boil
7) Reduce heat and simmer uncovered for 8 minutes
8) Add Cilantro, Lemon Juice and Panang Curry Paste
9) Cover and simmer for 5 minutes
Serve over rice or for a low glycemic load meal eat the curry by itself with the Cucumber Raita sauce or you can pick up 2 small bags of tofu sharitaki noodles.
