Are your taste buds ready for a change from all the left over turkey and dressing? Here is something completely different, to warm you up on these cool nights.
Cheesy Tortilla Soup
- 1 whole chicken, uncooked
- 1 med. onion, cut into wedges
- 1 Tbsp fajita seasoning
- 1 gallon water
- 2 – 10 3/4 oz. can cream of chicken soup
- 1- 10 oz. can diced Ro*Tel tomatoes
- 1 – 12 oz can evaporated milk
- 16 oz Velveeta cheese, cut up (I use 2% Velveeta.)
- 1 tsp garlic powder
- 2 tsp ground cumin
- 2 tsp dried cilantro
- fresh cilantro, chopped, to garnish
In large stock pot, combine chicken, onion, fajita seasoning, and water. Bring to boil and reduce to simmer for about one hour. Remove chicken and onion from water. Return to boil until broth is reduced by half. De-bone and cut chicken into bite-sized pieces and return to broth. Stir in remaining ingredients and heat through to melt cheese. Garnish with fresh, chopped cilantro and grated cheese. Serve with chips and guacamole.

Ooooo yum! I love this idea – homemade chicken stock with a cheesy soup is perfect. Although I have to admit that I might upgrade the cheese a bit. There’s something about Velveeta 😉
