Tempt My Tummy Tuesday.. Un-Fried Ice Cream

Here is a fun recipe for the warmer months.  My friend, Beth, brought “fried ice cream” to a recent small group dinner.  I love these meals because someone is always bringing something that causes me to say, “Hey, I need that recipe to share with my TMTT friends!”  Have you ever ordered fried ice cream at a Mexican restaurant?  I have and always wondered how they made it.   Well, this recipe is not actually fried, but is a recipe that mimics the actual fried ice cream and we love it!

Faux Fried Ice Cream

  • 1 quart of vanilla ice cream
  • 3 cups crushed corn flake cereal
  • 1 tsp of ground cinnamon (or more – to taste)
  • 1 tsp of sugar (or more – to taste)
  • honey for added flavor when serving
  1. Scoop ice cream into 8 – 1/2 cup size rounded balls.  Place on baking sheet and freeze until firm, about 1 hour.
  2. In a shallow dish combine corn flakes, cinnamon and sugar.  Roll the ice cream balls in the corn flake mixture, covering completely.  Repeat as needed.
  3. Freeze, again, until firm and ready to serve.  (About 3 hours).

Serve with a drizzling of honey and whipped cream if desired.  I really suggest the honey! It adds an extra yumminess to the dessert.

Beth also served baked flour tortilla triangles that had been sprinkled with cinnamon and sugar.  They were crunching an perfect to accompany the “fried ice cream”.

(I saw another variation where you use  Cinnamon Toast Crunch cereal instead of corn flakes, cinnamon,  and sugar.  That would work too. )

Cinnamon- sugar triangles

  • 4 flour tortillas, cut into 1/4 triangles.
  • sprinkle with cinnamon sugar mix
  • bake, on a cookie sheet in over, 350 degrees for 10-12 minutes.

Looks Yummy to me! first time i had fried icecream was at the mexican restaurant and i found it pretty amazing!
