Tempt My Tummy Tuesday… Cinco De Mayo Recipes

by Lisa on May 2, 2011

Today I am sharing links to some of my favorite Mexican recipes from this past year and one new recipe. All are wonderful and would help you have a wonderful Cinco De Mayo celebration.

And finally, here is a new recipe which I discovered this past week on www.allrecipes.com.

Easy Chicken Enchiladas

  • 1 small onion, chopped
  • 2 teaspoons oil
  • 3 cups shredded cooked chicken breasts
  • 1 (14.5 ounce) can no-salt-added diced tomatoes, drained
  • 1 (10 ounce) tub PHILADELPHIA Santa Fe Blend Cooking Creme, divided
  • 1/2 cup KRAFT Mexican Style Finely Shredded Four Cheese
  • 8 (6 inch) flour tortillas

  1. Heat oven to 350 degrees F.
  2. Cook and stir onions in hot oil in large skillet on medium heat 4 to 5 min. or until crisp-tender. Stir in chicken, tomatoes, 3/4 cup cooking creme and shredded cheese.
  3. Spoon about 1/3 cup chicken mixture down center of each tortilla; roll up. Place in 13×9-inch baking dish sprayed with cooking spray; top with remaining cooking creme. Cover.
  4. Bake 15 to 20 min. or until heated through.

Doesn’t that sound tempting?

I love an excuse to cook Mexican food! I am sharing my fresh salsa recipe. It comes together in 10 minutes and is great on chips or as a low cal salad dressing.

This sounds like a great recipe. Give me some Mexican food and I’ll give you a pop over with plenty of butter and some apricots. :))

I still have tried the Philadelphia Cooking cremes. They sound really yummy but my local stores don’t carry it yet. This might be the perfect excuse for a trip to the city! 😉

We were looking forward to a Mexican feast this Thursday, but my sister invited us over for spaghetti – ??? – don’t know what she’s thinking! We rearranged our menu and will do the feasting on Friday. Better late than never! Thanks for hosting and all the wonderful recipe inspiration. Blessings, ~Lisa

I had to tell you how much we LOVE the honey-lime enchiladas. It’s making a monthly rotation at our house, but I may start saving it for special occasions, it’s so good!!!
