A dear friendly recently served me this beautiful and quite delicious salad while we were having a play date with our children. I knew, as soon as I saw the dish, I had to share it with my TMTT friends! It is easy to make and a wonderful meal.
I am sharing the ingredients with you below but not giving exact measurements. You can decide how big you want your salad and how much of each ingredient your palate will enjoy.
Shrimp and Tortellini Salad with Balsamic Vinaigrette
- romaine lettuce, chopped
- feta cheese, crumbled
- shrimp, cleaned, boiled and peeled
- kalamata olives, chopped into halves
- grape tomatoes
- cheese tortellini (Cheese ravioli would be a great substitution.)
- Balsamic vinaigrette (We used a Light Balsamic vinaigrette.)
Combine first six ingredients. Next add desired amount of Balsamic vinaigrette. Toss. Done!
