Tempt My Tummy Tuesday… Slow Cooker Beans with Ham Bone

I hope you have all had a great Christmas weekend.  Now, what to do with all that left over ham?  At least that was the question I had last  night.  Thankfully I had the ham bone bagged in the fridge and a bag of beans in the pantry.  This is the what I made:

 

 

 

Slow Cooker Beans with Ham Bone

  • 1 pound dried pinto beans
  • 5 cups water, or more if needed
  • 1 small onion, chopped
  • 1 heaping teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground black pepper
  • 2 bay leaves
  • 1/4 teaspoon Italian seasoning
  • one ham bone, with some meat still on the bone
  • 1 cup extra ham left over, chopped up in to bite size pieces

Directions

  1. Wash and pick over the beans, then place them in a large bowl. Fill the bowl with cold water, and soak the beans for 6 to 8 hours.
  2. Drain and rinse the beans, then place into a slow cooker. Pour in 5-6 cups of water. Stir in onion, garlic powder, onion powder, black pepper, Italian seasoning, and bay leaves. Place the ham bone and extra ham into the cooker, cover, and cook on Low setting for 6 hours. Add more water if the beans are beginning to dry out; cook until the beans are very tender, an additional 2 hours.

I will be serving our bowl of beans with homemade beer bread, this evening for dinner.  HERE is the beer bread recipe.  It is SOOO good.
