This meal is hearty and comforting as well. We love a big bowl of beef stew at our home. Add homemade dinner rolls and you have a great meal! I discovered this dinner roll recipe several weeks ago, thanks to the TMTT blog carnival. You people always inspire. I love using recipes which I found while surfing through your blogs! I found this dinner roll recipe after clicking on Barb’s TMTT link for bread machine cinnamon rolls! Barb’s blog is A Life in Balance. HERE is the link to her homemade bread machine dinner rolls. These dinner rolls were wonderful and so super easy. I hope you will try them.
I served the dinner rolls with my hearty beef stew. It was a perfect combination. Now, when I make soups and stews, I never measure ingredients. I add what veggies I have on hand, and season with which ever seasonings sound good that day. I usually add bite sized chunks of potatoes to my stews. However, this week, I added bite sized pieces of sweet potatoes. It was great and the sweet potato will be making regular appearances in my beef stew for now on!
Hearty Beef Stew
- 1-2 lbs beef stew meat
- 1 can stewed tomatoes
- 1/2 can tomato sauce
- 2-3 cups chicken broth (Chicken broth is what I keep at home. I am sure beef broth would be great too.)
- 1 can water
- 3 stalks celery, chopped
- 3-4 carrots, chopped
- 2 sweet potatoes, chopped bite sized
- 1 medium onion, chopped
- 1/2 – 1 cup frozen corn
- 1/2 cup frozen peas
- 1-2 bay leaves
- seasoning to taste: salt, pepper, oregano, Italian Seasoning blend, garlic powder
Directions: Using a dutch oven, add 1 tsp olive oil and meat. Brown stew meat. Next add the chopped onion and continue cooking with the stew meat. Once the onions are softened, add the tomatoes, tomato sauce, broth, and all the vegetables – except the sweet potatoes. Add all the seasoning and bay leaf. Initially turn up the heat until it begins to bubble. Then turn the heat low and let the stew simmer. I do not add the sweet potatoes until about 20-30 minutes before I plan to serve the stew. This way the potatoes do not get too soft and mushy. I like to make the in the afternoon and let it simmer for at least an hour. This is such a simple stew, and I never make it quite the same. I vary the ingredients and the seasonings depending on what is in the pantry and freezer.
We will still have more cold days before Spring comes. This meal is perfect for the cold. Enjoy.
