This week’s recipe is easy to throw together, the outcome is tasty, and there are only 4 ingredients! I hope you enjoy.
Apricot-Pineapple Chicken
- 1.5 pounds boneless, skinless chicken breast tenders
- 1 1/2 cups apricot-pineapple preserves (I used Smuckers, which I found at Walmart.)
- 1/2 tsp garlic powder
- 1/2 tsp salt
Preheat the oven to 350. Prepare a 13×9 baking dish with a non-stick spray. Place the chicken in the baking dish. Combine the preserves, garlic powder, and salt. Cover the chicken with the preserves mixture. Bake at 350 for 40-45 minutes, uncovered.
I served our chicken with mashed potatoes and green peas. But, it would go great over steamed rice as well.
