Tempt My Tummy Tuesday….Apricot-Pineapple Chicken

Tempt my Tummy Tuesdays

This week’s recipe is easy to throw together, the outcome is tasty, and there are only 4 ingredients!  I hope you enjoy.

chicken recipe

Apricot-Pineapple Chicken

  • 1.5 pounds boneless, skinless chicken breast tenders
  • 1 1/2 cups apricot-pineapple preserves (I used Smuckers, which I found at Walmart.)
  • 1/2 tsp garlic powder
  • 1/2 tsp salt

Preheat the oven to 350.  Prepare a 13×9 baking dish with a non-stick spray.  Place the chicken in the baking dish.  Combine the  preserves, garlic powder, and salt.  Cover the chicken with the preserves mixture.  Bake at 350 for 40-45 minutes, uncovered.

I served our chicken with mashed potatoes and green peas.  But, it would go great over steamed rice as well.

I adapted this recipe from an eMeals.com recipe.

The chicken looks wonderful. I love chicken cooked with jam like this. I have not used apricot/pineapple. Will have to give it a try. Today I bring Chicken in Shells Alfredo. Thanks for hosting and have a great week.
