It is COLD. Burrrr…. When it is cold I want something warm and comforting. That is why I bought stew meat at the store today and will be making my beef stew recipe this week.
Hearty Beef Stew
- 1-2 lbs beef stew meat
- 1 can stewed tomatoes
- 1/2 can tomato sauce
- 2-3 cups chicken broth (Chicken broth is what I keep at home. I am sure beef broth would be great too.)
- 1 can water
- 3 stalks celery, chopped
- 3-4 carrots, chopped
- 2 sweet potatoes, chopped bite sized
- 1 medium onion, chopped
- 1/2 – 1 cup frozen corn
- 1/2 cup frozen peas
- 1-2 bay leaves
- seasoning to taste: salt, pepper, oregano, Italian Seasoning blend, garlic powder
Directions: Using a dutch oven, add 1 tsp olive oil and meat. Brown stew meat. Next add the chopped onion and continue cooking with the stew meat. Once the onions are softened, add the tomatoes, tomato sauce, broth, and all the vegetables – except the sweet potatoes. Add all the seasoning and bay leaf. Initially turn up the heat until it begins to bubble. Then turn the heat low and let the stew simmer. I do not add the sweet potatoes until about 20-30 minutes before I plan to serve the stew. This way the potatoes do not get too soft and mushy. I like to make the in the afternoon and let it simmer for at least an hour. This is such a simple stew, and I never make it quite the same. I vary the ingredients and the seasonings depending on what is in the pantry and freezer.

Your stew looks wonderful. I’ve never used sweet potatoes in stew but I love them And I’ll try it next time. I love soups and stews in the winter.

My mom said it IS very cold there today. It was unusually warm in PA today, however. I love the addition of the sweet potatoes in your recipe. I can make some vegetarian substitutions and make this when our temperature drops again!
