Now for today’s recipe.  In keeping with the Thanksgiving theme,  here is a super simple recipe for pumpkin spice muffins.  They would be perfect to serve your house guests on Thanksgiving morning.  I shared this recipe in the past, but had to share it again – because they are so good!  I made these muffins this week and we have enjoyed them for several days!

Pumpkin Spice Muffins

1- 15 oz can pumpkin

1- spice cake mix

Combine both ingredients, using a hand mixer.  Fill 12 muffin cups with batter and bake at 350 for 20 minutes.  (Weight Watchers: 2 points per muffin.)

Now, let me tell you it is a dense batter and my muffins were not very pretty – but OH BOY, they are mighty tasty, and moist!

I previously shared a new recipe I created for ravioli lasagna.  It was so easy I decided to make it again but with a new variation, using sweet Italian sausage.  I really enjoy using the Pasta Prima Organic Spinach and Cheese ravioli.  These products use the highest quality, 100% natural ingredients.   They are preservative free with no artificial flavors.  I like that!  I have found their products at our local Costo, in the refrigerated section,  for a reasonable price, and continue buy them on my visits to the store.  So, when making this ravioli lasagna, I wanted to use the Pasta Prima spinach and cheese ravioli.  I was pleased with this choice.  Also, since my 4 year old daughter is such a carnivore, I added sweet Italian sausage which we all enjoyed as well.   This recipe would work well with the Pasta Prima Grilled Chicken with Mozzarella ravioli as well.  (I really like the Grilled Chicken with Mozzarella ravioli.)   Although, I would leave the Italian sausage out when making this variation.

 

Spinach Ravioli Lasagna with Sweet Italian Sausage

Spinach Ravioli Lasagna with Sweet Italian Sausage

Ingredients:

  • 2 packages of the 8 oz Pasta Prima spinach and cheese  ravioli
  • 8 oz Italian blend shredded cheese (I used Sargento Bistro Blends Italian Pasta Cheese with Italian Herbs.)
  • 1 jar of spaghetti sauce
  • 1 pound of ground sweet italian sausage, browned.

Directions:

  1. Preheat oven 350.  Spray cooking spray in a glass 9×13 baking dish.
  2. In a large bowl, combine the spaghetti sauce and browned ground sausage.
  3. Pour a thin layer of spaghetti sauce with sausage on the bottom of the baking dish.
  4. Next, layer with 8 oz spinach ravioli – use enough to cover the baking dish.
  5. Cover spaghetti sauce over ravioli.  Be generous with your sauce, but leave some to cover the next layer.
  6. Sprinkle your Italian cheese blend over the sauce.  If you do not have a cheese with Italian herbs, then use Italian seasonings here, to add flavor.
  7. Next layer with remaining 8oz package of spinach ravioli.
  8. Layer with remaining spaghetti sauce with sausage.
  9. Finish with a final layer of shredded cheese.  Again, if you want, sprinkle some extra Italian seasonings on top for added flavor.
  10. Bake at 350 for approximately 30 minutes.

This recipe has become a new favorite at our home, and since it is so tasty and easy to make, I am sure you will enjoy it as well.
